What 5 years of weddings have taught us

5 years of weddings

When we first started Eat Street, catering weddings was never in the plan, however we quickly realised that we wouldn’t be able to sustain the business on takeaway alone.

Our first wedding was 5th August 2021, at Isle of Wight Pearl, on a blustery day! Since then, we have learnt a huge amount; what we’re willing to compromise on, what we’re not, how ambitious we can make the menu to suit the capabilities of the new horsebox, who we are as wedding caterers but most importantly, not every enquiry will be suited to our style of food or service.

In those early days, when we were growing the business, we said yes to almost every event, even if the requested dishes weren’t quite ‘us’, or it meant we wouldn’t get a day off for almost 8 weeks. It was what we needed to do to help build the brand and word of mouth recommendations.

Since then, we value our personal time a lot more, especially now we have Mabel on the scene, so we frequently turn down events, or recommend to other small businesses if we feel it’s too much or will stretch us nearer to breaking point. As with every event, big or small, Alex cooks everything himself, with almost everything being cooked from scratch. This in itself takes a huge amount of planning – which we have fine tuned over the years.

A simple burger and roasties for 100 isn’t just about buying in bread, beef patties, frozen chips, turning up just before service and getting on with it. It’s brining the Island meat for 24 hours, slow cooking for 2 days, and sometimes smoking for a few hours to give every burger that delicious recognisable Eat Street flavour. It’s getting up at 4am to bake the bread fresh on the day of each event – always. It’s buying in spuds, which we lovingly prepare, boil and roast to create a delicious herby roastie.

Over the years, we’ve learnt what requests work for us, along with cuisines. If you’re after a formal 4 course meal of classic French food, we’re not the caterer for you. But if you’re after a delicious family style feast of colourful Middle Eastern dishes we are!
Sometimes it’s best to know where your passions are, and for us that’s street food, unique flavours, bright colours and World cuisine.
Our frequent wedding dishes include our signature brightly coloured breads, slow cooked meats, salads that are Worlds away from a traditional Caesar or Waldorf, dips that pack a punch and desserts that are beautifully created with personal touches and garnishes.

With every wedding, comes a different budget, so we’ve fine tuned our pricing over the years, ensuring we continue to offer that all important value for money, whilst also pricing the high quality of ingredients, high levels of attention to detail and skill accordingly. We know that we don’t ever want to be serving a buffet spread for £5 per person, neither do we want to be charging our clients £100+ per person for a wedding breakfast. We think we’ve achieved a brilliant balance, and one our clients seem to acknowledge and be happy with.

We also want to ensure our couples think their wedding menu is perfect, especially with some slightly different dishes they may not have tried before, so we always offer a complimentary tasting for events over 50 guests, for us, it’s all about the added value we can provide.

Whilst all the weddings we’ve done over the years have been special, there have been a few that have really stayed with us, either because it was something different menu wise, or because we really got to know the couples and keep in contact now. It’s wonderful seeing everyone’s different tastes, styles and vibes!

Our wedding services have also evolved over the years. In the early days, we focused on just the food, whereas now with Laurel’s experience as well, we offer wedding coordination and hire of various items. This adds a new layer of complexity and logistics to managing each wedding, but it’s wonderful being able to offer our clients the complete package and take that dreaded wedding stress away!
2023 saw us cater 12 weddings, which we always knew would be tough, but we were so up for the challenge. Unfortunately, it was also the year Laurel suffered a miscarriage and fell pregnant with Mabel, so Alex ended up working single handedly for most of the season, causing a huge burnout and colitis flare up by September. Since then, we’ve limited our weddings to 10 per year, although for anyone who knows weddings, that ‘year’ is more like 6 months!
We love being able to offer our couples the feel of exclusivity when they book with Eat Street. They know that they are one of very few couples enjoying our services that year, every email, message, phone call will be answered by Laurel and that both of us will always be there on the special day.

We also love a challenge – if a couple says to us ‘we’d like a Cuban feast’ or ‘we’d love traditional Indian street food’ it immediately gets us excited! Alex loves developing new dishes, and creating menus and to be given a creative flare with the food is simply wonderful. It’s client’s way of saying ‘you’re the expert, we trust you and know it’s going to be delicious!’

One of the things we never predicted with Eat Street, was that spending money on marketing wouldn’t work. Whilst we’ve invested some money into marketing specifically for weddings (mainly in 2021 & 2022), we’ve not seen anything back from it, so now we stick to good old-fashioned word of mouth, and a slightly more modern version – social media! As we knew from the beginning, we never wanted to be a wedding machine, churning out multiple weddings a week, not having a single weekend off in the summer, employing multiple members of staff and losing that personal touch that so many people love, it seems fitting that we advertise through our photos of previous events and client reviews. What do they say about a picture being worth 1000 words?

We’re so proud of the high level of service we continue to offer to our clients, and look forward to seeing how things change over the next 5 years, but for now, here are some wedding highlights
